In response to the 'NFL Challenge' in our Playful Pantry Group, here is my entry. The challenge was to make an appetizer with the theme being based on your home team. Any sport would work, but I stuck with the NFL, and my New England Patriots! Read more ! Ingredients:
4 skinless, boneless chicken thighs |
12 - 16 baby bella mushrooms |
1 1/2 cups flour |
1 tsp salt |
1 tsp black pepper |
1/2 tsp cayenne pepper |
1/2 tsp garlic powder |
bleu cheese dressing |
oil for frying |
buffalo wing sauce |
Directions:
1. Heat frying oil ( I use shortening) to 350 degrees 2. Cut chicken into bite sized bits 3. Combine flour and all spices in a bowl, and dredge the chicken 4. Let chicken rest for a minute or two 5. Fry approximately 5 minutes. The chicken is so small, it will overcook quickly, so watch them carefully 6. Remove from oil and toss with your favorite Buffalo Wing sauce and set aside 7. Mushrooms: 8. Carefully spoon out the stem and gills 9. Fry in oil for approximately 3 minutes, or until the oil stops bubbling 10. Remove from oil, and pat with paper towel to absorb any excess oil 11. Place approximately 1 tsp of Bleu Cheese Dressing in each cap, and then top with the chicken bites 12. Serve with cold beer and a good game!! |
