This is a quick and simple app that seems to please everyone Ingredients:
20 small new potatoes |
1/4 cup vegetable oil |
coarse salt |
1/2 cup sour cream |
1/4 cup crumbled bleu cheese |
2 tablespoons chopped fresh chives |
Directions:
1. Preheat oven 350 2. Wash/dry potatoes 3. Pour oil in bowl 4. Add potatoes, toss to coat well 5. Dip potatoes in salt to coat lightly 6. Spread potatoes on baking sheet, bake until tender 45-50 minutes 7. In small bowl combine sour cream and bleu cheese 8. Cut a cross on top of each potato. Press with fingertip to open potato. 9. Top each with dollop of mixture. Sprinkle with chives. 10. ENJOY |
