Baby Back Ribs With Chili Potatoes |

Delectable baby pork ribs, grilled to perfection, and served with potatoes with some 'kick' to them! Ingredients:
2 pork back ribs |
4 medium red potatoes, each cut into 8 wedges |
3 tbsp cilantro chili lemon grilling sauce |
1/2 red onion, sliced |
1 orange sweet bell pepper, seeded and cut into wedges |
1 tsp oregano |
salt & pepper to taste |
sprigs of fresh rosemary |
Directions:
1. Prepare ribs by cutting into 4 portions. 2. Place potatoes in a pot of cold water, bring to a boil and simmer until tender-firm, about 15 minutes. 3. Drain and set aside. 4. Heat grilling sauce in a skillet set over medium heat. 5. Add onion and bell pepper and sauté for 2 minutes. 6. Add potatoes and sauté until heated throughout, about 2 minutes. 7. Serve with ribs. 8. =================== 9. Cooking the ribs: 10. Brush ribs with canola oil to help prevent sticking to the grill. 11. Sprinkle oregano over ribs. 12. Add salt & pepper to your preference. 13. Grill over medium-high flame until browned and tender. 14. Garnish with sprig of fresh rosemary. |
