Baby Back Ribs - Candy Spicy Ginger |

This is like gingered candy back ribs it really is a great blend of flavors for pork. Ribs fall off the bone and melt in your mouth. Ingredients:
2 back ribs, full racks |
1 tablespoon salt |
1 1/2 tablespoons powdered ginger |
1/2 teaspoon pepper |
1 teaspoon onion powder |
1 teaspoon ground coriander |
1 tablespoon garlic |
1/2 cup apple cider vinegar |
4 tablespoons ginger, freshly crushed |
1 chili pepper, red long chopped fine |
1/3 cup honey or 1/3 cup molasses |
1/2 tablespoon brown sugar |
1 tablespoon ginger jam (optional) |
1 garlic clove, crushed |
3 teaspoons tomato paste |
1/3 cup onion, chopped |
1/2 lemon, juice of |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Combine all dry spices and blend nicely. 2. coat the back ribs and let stand to marinade for 3 hours or overnight in fridge. 3. Pre-heat oven to 300 degrees. 4. place ribs in covered roasting pan place in oven and roast for 2 1/2 hours. 5. combine all ingredients for sauce in a saucepan and bring to gentle boil for 20 min or until reduced by 1/3 or thickened to desired consistency. 6. once ribs have roasted remove from oven and coat with the sauce and place back in oven for 30 minute or bbq for 5 min per side and then coat with sauce and bbg for an additional 5 min per side on low heat. |
