Taken from the book If The Buddha Came To Dinner By Hale' Sofia Schatz with Shira Shaiman This broth is rich in potassium and other minerals, for cleansing any time of year,when you are feeling a bit run down. Ingredients:
3-4 large kale leaves |
1 bunch beet greens |
4 stalks celery |
1 bunch parsley |
8 cups water |
or any of the following |
2 small leeks, rinsed thoroughly, roots trimmed, and cut in half |
1/2 bunch scallions |
1 bunch watercress |
2-3 collard green leaves |
Directions:
1. Wash all of the greens and cut the celery in half. 2. Place the vegetables into a soup pot and add the water. 3. *( the pot should be no more than 3/4 full). 4. Bring to a boil and reduce to a simmer for2 hours. 5. Use the liquid only and discard the vegetables after all the broth has been consumed, 6. * Drink this broth as a tea throughout the day . |
