Traditional Middle Eastern Vegetarian Dish Ingredients:
2 small eggplants - cut in half lengthwise |
4- 6 cloves garlic - chopped coarsely |
3- 4 tablespoons sesame tahini (fresher is tastier) |
2- 3 tablespoons fresh squeezed lemon juice |
1 teaspoon kosher salt |
2 tablespoons olive oil |
1 tablespoon paprika |
Directions:
1. Roast Eggplants on Grill / or over gas burner until tender (skin will be burned - that's OK) 2. Peel & Chop Roasted Eggplants 3. Add Chopped Eggplant, Chopped Garlic, Tahini, Lemon Juice, and Salt to food processor and pulse/puree until smooth 4. Adjust Lemon Juice & Salt to taste. 5. Move to serving bowl, drizzle with Olive Oil and dust with Paprika. 6. Serve with warm Pita Chips, Corn Chips, or Vegetable Sticks. |
