Ingredients:
1 medium eggplant, peeled (and cut into 1/2-inch cubes (about 3 cups) |
1/4 cup tahini |
1 tablespoon lemon juice |
1 garlic clove |
1/4 teaspoon black pepper |
1 dash cumin, ground |
2 tablespoons sesame seeds |
2 tablespoons fresh parsley, finely chopped |
Directions:
1. Steam eggplant until tender, about 8 minutes. 2. Place cooked eggplant in food processor. 3. Add tahini (sesame paste),lemon juice, and garlic. 4. Puree. 5. Stir in remaining ingredients; spoon into serving bowl. 6. Garnish with parsley sprig. 7. Serve warm or chill. 8. HINTS: - smaller eggplants have thinner peels and a sweeter flavor. 9. Select. |
