B & O Maryland Spoon Bread |

This recipe is taken from What's Cooking on the B & O a pamphlet issued by the railroad many, many, years ago. Ingredients:
1/2 cup fine yellow cornmeal |
1 teaspoon bacon drippings |
1 teaspoon sugar |
1/3 teaspoon salt |
1/2 cup boiling water |
1 egg, beaten |
1 cup buttermilk |
1/4 teaspoon baking soda |
1 teaspoon cold water |
Directions:
1. Put the corn meal, bacon drippings, sugar, and salt into a baking dish. Pour the boiling water over them gradually and beat well. When the mixture is cool add the beaten egg, milk, and the baking soda, plus the 1 tsp cold water. Beat the whole mixture well. Bake in a deep dish for 20 minutes in a preheated 350 degree F oven. |
