I received this recipe from a client of mine who also gave me apples from their trees here in Winnipeg. This is a nice light version of an apple cake which is great with ice cream or Cool Whip. I usually cut my apples into salty water to keep them from turning brown, but then I do not add salt to my batter. Ingredients:
1/2 cup sugar |
1 1/2 cups flour |
1/3 cup margarine |
3/4 cup milk |
1 egg |
2 teaspoons baking powder |
1 pinch salt |
1 1/2 cups apples, sliced |
1/2 cup brown sugar |
3 tablespoons margarine |
cinnamon |
Directions:
1. Mix sugar, margarine, egg and milk together. 2. Combine dry ingredients and add to mixture. 3. Beat well. 4. Pour into greased and lightly floured 9 x9 cake pan. 5. Spread apples closely together on top of batter. 6. Mix margarine and brown sugar and dot over apples. 7. Sprinkle with cinnamon. 8. Bake at 350 deg.F for 30-35 minutes. |
