Awsome Mexican Italian Frittata |

Took my favorites from italian and mexican cuisine and tossed it together. Now a definate favorite! Tastes good leftover as well! Heat up and throw on some toast with a little mayo! Dreamy! Ingredients:
4 eggs |
1 slice prociutto diced |
1 spicy chicken sausage link skin removed and diced |
4 mushrooms cleaned and sliced |
1 spring onion chopped |
1 pickled jalapeno chopped |
1 clove garlic minced |
1/4 cup baby romaine, cut in thin strips |
1 tsp each of rosemary, thyme, and basil chopped fine |
2 slices pepper jack cheese halved |
1 small vine ripened tomato sliced |
1 tbsp olive oil |
salt and pepper to taste |
Directions:
1. preheat oven to 375 2. heat 12 inch skillet on medium high heat 3. add olive oil, garlic, prociutto, and sausage to hot skillet 4. while it is browning and getting nice and crispy whisk eggs until light and frothy 5. whisk in spring onion, jalapeno, romaine, rosemary and thyme and basil 6. by this time sausage and prociutto should be getting browned, add in mushrooms and allow to saute for a couple minutes 7. once mushrooms are browned and pretty pour egg mixture over the top. 8. allow to set up on the bottom, top with sliced tomatoes, salt and pepper 9. put in oven for a few minutes and allow to set a little on top 10. pull back out and put 1/2 slice pepper jack cheese on each quarter 11. bake for another 5-7 minutes until set and cheese is melted and bubbly 12. Slice into 4 pizza type slices 13. Serve with a side of hashbrowns |
