I have seen variations of this recipe in many places. It is an awesome and easy way to spice up chicken breasts for grilling. Ingredients:
six boneless, skinless chicken breasts |
six jalapeno peppers |
three ounces cream cheese |
three ounces shredded sharp cheddar cheese, grated |
six strips of bacon - uncooked |
bbq sauce |
toothpicks |
Directions:
1. Mix the cream cheese and cheddar cheese; 2. Split open the peppers on one side, carefully scraping out the seeds and membranes; 3. Wash your hands after dealing with the peppers! 4. Stuff the cheese mixture in the peppers; 5. Put one chicken breast in a baggie or between two pieces of plastic wrap; 6. Pound the chicken uniformly thin; do this to all the breasts; 7. Wrap one stuffed pepper in one pounded chicken breast; it should look like a small oblong piece of rolled up chicken; do this to all the breasts; 8. Wrap one piece of bacon around each breast and secure with toothpicks; 9. Grill and baste with bbq sauce; 10. Remove toothpicks and serve. |
