This is a great ranch dressing that really tastes like Hidden Valley, but is almost fat-free! It can also easily become vegan by using 1 cup of soft tofu (mori nu). Ingredients:
1 cup plain nonfat yogurt |
1 tbs dried parsley, crushed |
2 tbs vegenaise or mayonaise |
1/2 tsp soy sauce (gluten free) |
1 tsp garlic powder |
1 tsp onion powder |
1/4 tsp pepper |
2 tbs vinegar (red wine) |
Directions:
1. Place all ingredients into a bowl and whisk together. 2. Makes about 1 1/4 cups. Serving size is 1 tbs 3. Alterations; 4. Spicy :: 1 TBS horseradish + 1/2 TSP pepper 5. Roasted Red Pepper :: add 1 roasted red pepper (jarred). Blend everything in food processor 6. Smoky :: 1 TSP smoked sweet paprika OR 1 tsp paprika + a splash of liquid smoke. |
