This is a nice, moist quick bread filled with healthy ingredients. It's lovely spread with some butter to enjoy with coffee or tea. Ingredients:
1 cup all-purpose flour |
1 cup whole wheat flour |
1 cup quick-cooking rolled oats |
2 teaspoons baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
3/4 cup milk |
1/2 cup plain yogurt |
1/2 cup molasses |
1/4 cup vegetable oil |
1 egg |
1 cup raisins |
Directions:
1. Grease a 9 x 5 loaf pan and set aside. 2. In a large bowl, combine the flours, rolled oats, baking powder, baking soda and salt. 3. Add the remaining ingredients, stirring just until the dry ingredients are moistened. 4. Spoon the batter into the prepared pan. 5. Bake in a 350 degree F oven for 1 hour or until a toothpick inserted in the centre comes out clean. 6. Turn out and let cool on a wire rack. |
