Perfect onion gravy (super yummy - keeps well for a day or two in the refrigerator). Use it with beef/pork or for poutine. Ingredients:
olive oil |
1 onion, diced |
garlic powder |
2 tablespoons butter |
2 tablespoons flour |
1 tablespoon tomato paste |
1 1/2 cups vegetable stock |
worcestershire sauce |
reduced sodium soy sauce |
black pepper |
Directions:
1. Saute onion and some garlic powder in olive oil 30 minutes or until very tender (low heat; don't brown onions). 2. Add butter and flour to make roux; cook it for about 5 minutes. 3. Add tomato paste and cook another minute or so. 4. Add vegetable stock; mix well to thicken. 5. Add a few shots of Worcestershire sauce to get it a little brown. 6. Use soy sauce as salt (to taste) to make it a bit darker. 7. Add pepper to taste. |
