half of a large bag of tortilla chips |
small can of refried beans |
2 cups cheese (cheddar and monterey are perfect) |
1/2 chopped red bell pepper |
1/2 chopped green bell pepper |
16 ounce container sour cream |
3 tbls taco seasoning mix |
tabasco sauce (optional) |
1 small onion, diced |
small can of sliced olives |
Directions:
1. Set broiler on low 2. Warm up refried beans in microwave for 2 minutes (cover them, they explode. Trust me I know) 3. On a cookie sheet spread out tortilla chips evenly and cover with beans 4. Then add some onion 5. Sprinkle cheese evenly 6. Put directly under broiler for 6 minutes or until cheese is melted nicely 7. Mix sour cream with taco seasoning and add a dash or two of Tabasco, if using. 8. Cover cheese with a layer of the sour cream mixture 9. Add bell peppers 10. Then sprinkle with olives 11. If your a carnivore, you can use shredded chicken or ground beef instead of beans |
