I decided that a meatloaf can be nothing more than one big meatball in a different shape. I tested it out on a guy in Cedar Rapids using dried herbs. It went over pretty well. A couple of weeks later, I decided to plan better and bring fresh herbs. I used 2 lbs of lean ground beef (93%), 1lb of ground pork and 1/2 lb of cheese. I heard one of the guys say, Awesome meatloaf! The next thing I knew, it was all gone. Three guys ate the whole thing. Here's the recipe. Ingredients:
2 lbs lean ground beef |
1 lb ground pork (or other ground meat such as lamb or veal) |
4 minced garlic cloves |
1 shallot, minced |
1 small onion, minced |
2 sprigs fresh rosemary, minced |
2 tablespoons fresh thyme, minced |
4 leaves fresh sage, minced |
3 tablespoons fresh parsley, minced |
1/2 lb mozzarella cheese |
1 cup italian seasoned breadcrumbs |
Directions:
1. Pre-heat oven to 375 degrees. 2. Mix the meat, onion, shallot, garlic, and herbs together in a bowl. 3. Let it set for 45 minutes to an hour. You don’t have to do this, but I think it’s better. 4. Mix in the breadcrumbs. 5. Cut the Mozzarella into a shape you can wrap the meat around. 6. Wrap the meat around the cheese to form a loaf. 7. Put it in a baking dish and bake for about 45 minutes. Check for doneness. 8. If it is done, serve it! |
