This is an interesting meatloaf, using two different meats, and some other fun things to make a really moist, flavorful meatloaf! Ingredients:
2/3 lb ground beef |
1/3 lb ground pork |
1 bell pepper, diced |
1/2 white onion, diced |
2 eggs |
1 cup oatmeal |
8 ounces cheddar cheese |
1/2 tablespoon chili powder |
1 teaspoon paprika |
1/2 tablespoon crushed red pepper flakes |
1 teaspoon basil |
1 teaspoon oregano |
1/2 teaspoon salt |
1/2 teaspoon pepper |
8 ounces salsa |
1 cup ketchup |
1 tablespoon brown sugar |
1 tablespoon worcestershire sauce |
Directions:
1. Preheat oven to 350 degrees. 2. Mix the meats, eggs, peppers, onion, spices, oatmeal and cheese in a large bowl. 3. Put into a 9 x13 glass baking dish that's sprayed with cooking spray. 4. Cook at 350 for 30 minutes. 5. Mix the salsa, ketchup, brown sugar and Worcestershire in another bowl; this will be a glaze. 6. After 30 minutes, remove the meatloaf and spread the glaze over the top. 7. Bake the meatloaf and glaze for another 10-15 minutes, or until glaze is bubbling. |
