This is an amazingly delicious dish. I found it in Juliano's Raw Uncook Book, and made a few modifications. Ingredients:
1 chopped apple |
1 clove garlic, minced |
1 tsp minced ginger |
1 c chopped tomatoes |
1 c red bell pepper |
2 c raw corn, cut off of the cob |
1 c onion |
2 cups fresh squeezed orange juice |
sea salt and pepper to taste |
Directions:
1. Mix all ingredients together. 2. Serve cold or at room temperature. |
