Awesome, Guilt-Free Chocolate Muffins

A little high in carbs (27.1 g) but an occasional treat
Ingredients:
1 c applesauce
1 t olive oil
1/2 c turbinado sugar
1 t vanilla extract
1/4 t almond extract
3/4 c oat flour
1/3 c unsweetened cocoa
2 t baking powder
1/2 t baking soda
1/2 t salt
1/8 t ground cinnamon
1/2 c chocolate chips
Directions:
1. Preheat oven to 350 degrees.
2. Place 8 paper liners in muffin tin; coat with cooking spray.
3. Combine applesauce and next 4 ingredients.
4. In a separate bowl, whisk together the next 6 ingredients. Add oat mixture to applesauce mixture; stir until blended. Stir in chocolate chips.
5. Spoon batter into muffin cups. Bake for 20-22 minutes, rotating the pan a half turn after 10 minutes.
6. Muffins are done when tops are firm to the touch.
7. Cool slightly.
