Awesome Gluten Free Chocolate Chip Cookies |

This is a favorite recipe I adapted to be gluten free for my husband. It's soft and chewy and doesn't dry out quickly like most gluten free cookies do. Ingredients:
1 cup butter |
3/4 cup packed brown sugar |
1/4 cup sugar |
1 (3 1/2 ounce) package vanilla instant pudding mix |
2 eggs |
1 teaspoon vanilla extract |
2 1/4 cups gluten-free flour, mix (i use bette hagaman's featherlight flour mix.) |
1/2 teaspoon xanthan gum |
1 teaspoon baking soda |
2 cups semi-sweet chocolate chips |
Directions:
1. In mixing bowl, cream butter, sugars and pudding mix. 2. Add eggs, one at a time, beating well after each addition. 3. Beat in vanilla. 4. Gradually add flour mix, xanthan gum, and baking soda. 5. Stir in chocoate chips. 6. Drop by rounded teaspoonfuls 2 inches apart onto parchment paper lined cookie sheet. 7. Bake at 350 for 8-10 minutes. 8. Remove to wire racks and let cool. 9. Enjoy! |
