This recipe will coat about 2lbs filets. I am an avid angler and catch a lot of fish. I have been frying these fish for years. I have been adjusting this recipe forever. Finally think I got it perfect enough to make my first recipe post. So here goes enjoy! Ingredients:
1/2 cup all-purpose flour |
1/2 cup corn flour |
1 tablespoon cornstarch |
1/4 teaspoon baking powder |
1/4 teaspoon baking soda |
1 teaspoon salt |
1/2 teaspoon garlic powder |
1/2 teaspoon onion powder |
1/2 teaspoon paprika |
1/2 teaspoon white pepper |
beer or water |
Directions:
1. Mix all dry ingredients with a whisk, then add water or beer till thin consistency - approximately a cup. 2. let rest in fridge for 10 minutes, then add more liquid till it is loose (thin). 3. dunk filets in and drop in 375-degree oil ( I use a 12 inch chicken fryer or deep skillet something heavy that conducts heat well) fry till golden brown and remove to a cookie sheet with a rack so fish doesn't lay in oil. excess oil will drop to pan below this is much better than paper towels - . |
