Awesome Chicken Noodle Soup |

A flavorful, comforting way to get some healthy soup! Ingredients:
3 boneless, skinless chicken breasts, cut into small pieces |
1 onion, chopped |
1 clove chopped garlic |
1 tbsp olive oil |
several sprigs fresh thyme |
5 carrots, sliced |
3 stalks of celery with tops, sliced |
5 parsnips, sliced |
salt & pepper to taste |
48 oz. chicken stock |
1/2 of a 12 oz. pkg. wide whole wheat noodles |
Directions:
1. Heat pan and add olive oil. 2. Sauté onion until slightly tender; 3. add garlic, salt, and pepper, and sauté for a few more minutes; 4. add chicken stock, chicken, and thyme; 5. bring to a simmer and cook for 20 minutes; 6. add carrots, celery, and parsnips and cook for 20 minutes; 7. Remove thyme stems, pull leaves from stems and add back to soup 8. add noodles and cook another 15 minutes, until noodles are tender. |
