Awesome Chicken And Sausage Quesedillas |

We love quesadillas any way you fix 'em! This is one of our favorites. Makes 4 that can be sliced into 4 wedges for appetizers, or as a main dish for fewer people. Serve with sourcream, salsa, and pico de gallo Ingredients:
2t margarine or butter |
2t evoo |
6 skinless boenless chicken thighs, cut into small pieces |
8 oz andouille, keilbasa, or other smoky sausage, cut into small chunks |
1 red pepper, cored, seeded, and shopped small |
1 onion, chopped small |
4 cloves garlic, finely chopped |
1 can (4 oz) mild green chiles (drained and chopped) |
1 jalepeno (optional - seeded and chopped fine) |
1 t chili powder |
1 t cumin |
seasoned salt |
garlic pepper |
dried cilantro |
8 10 flour tortillas |
2 c shredded cheddar jack cheese (or your fave) |
foreman grill (or cast iron skillet) |
Directions:
1. In nonstick or cast iron skillet, melt together margarine and EVOO (i know - but too lazy to type it all out! LOL) 2. Add to skillet chicken, sausage, peppers, onion, chiles and seasoning 3. Cook together about 10 minutes, until chicken is done and veggies are soft 4. Remove from heat 5. Lay tortilla on foreman grill, spread with 1/4 of the cheese, top with 1/4 the filling, and another tortilla 6. Grill about 2 minutes with lid closed (until crsip and cheese is melted) 7. Repeat with remaining ingredients 8. (If your foreman grill is small, layer the engredients on half the tortilla and fold remaining half over top) |
