This is one of my favorite cheesecake recipes. It has a creamy and smooth texture. Topped with seasonal fruits, it is sure to please. Ingredients:
1 1/2 cups crushed graham cracker crumbs |
2 tablespoons sugar |
1/2 cup butter, softened |
1 1/2 teaspoons ground cinnamon |
3 (8 ounce) packages cream cheese, room temp |
1 cup sugar |
3 eggs |
2 teaspoons vanilla extract |
1 (16 ounce) sour cream |
1/4 cup sugar |
1 teaspoon vanilla |
Directions:
1. Preheat oven to 375 degrees. 2. In food processor, combine graham cracker, 2 tablesppons sugar, buter and cinammon. 3. Pulse crumb ingredients until blended. 4. Press into bottom and 1/2 inch up sides of 9 inch springform pan. 5. In food processor, blend cream cheese, 1 cup sugar, eggs and 2 teaspoons vanilla. Process until smooth. 6. Pour cream cheese mixture over prepared crust. 7. Bake for 25-30 minutes or until filling is set. Allow to cool for 2 hours on wire rack. 8. Preheat oven to 350 degrees. 9. In a small bowl, mix together the sour cream, 1/4 cup sugar and 1 teaspoon vanilla. 10. Spread over cheesecake. 11. Bake for 10-15 minutes. 12. Cool on wire rack and store covered in refrigerator until serving. |
