A really nice balance between sweet, tart and tangy, and peppery. This salad is simple, different, and enhances a meal with a rather neutral main dish such as plain grilled chicken, fish, or tofu.
Ingredients:
one 12 ounce bag of pre-washed, salad ready baby arugula(rocket)
one medium green granny smith apple
1/4 teaspoon ground cinnamon
1/2 cup sweetened cranberry juice
1/2 teaspoon sugar
2 tablespoons mayonnaise
dash salt
few grinds of good-quality black pepper(essential to the dish)
juice of half a lime to finish
Directions:
1. Place greens in a salad bowl large enough for tossing.
2. Chop apple and add to bowl.
3. Mix cinnamon, cranberry juice, sugar, mayonnaise, and salt in separate bowl until smooth-do not be concerned about curdling.
4. Pour mixture over salad and toss gently.
5. Grind on pepper, generously.
6. Just before serving, squeeze fresh lime juice over each portion.
