Awesome Almond Buckwheat Pancakes |

Fluffy with a crunchy layer of golden almonds - yum! Ingredients:
combine |
1/3 c buckwheat flour |
1/3 c whole wheat (or whole spelt) flour |
3/4 tsp baking powder |
1/4 tsp salt |
2 tsp sugar (optional) |
combine separately |
1/3 c yogurt |
1/2 c milk (or substitute) |
1 egg |
1 tbsp melted butter |
slivered almonds |
Directions:
1. Mix wet and dry ingredients until just incorporated - batter can be a bit lumpy. 2. Heat a frying pan over medium heat with about a teaspoon of butter. You can spray your pan with oil (grape seed works well) instead if you like. 3. Pour in 1/4 of the batter and generously sprinkle with slivered almonds. 4. When bubbles start to appear in your pancake, flip it and cook until slightly browned on bottom. 5. Repeat with the rest of the batter adding a bit more butter to the pan each time. 6.
