Ingredients:
2 teaspoons vegetable oil
1/2 teaspoon minced ginger
1 tablespoon chopped garlic
1/2 cup soy sauce
1/2 cup water
3/4 cup dark brown sugar
1 cup vegetable oil
1 pound flank steak
1/4 cup cornstarch
2 large green onions
Directions:
1. Heat oil over medium low heat then add ginger and garlic to pan.
2. Quickly add soy sauce and water before garlic scorches.
3. Dissolve brown sugar in the sauce then raise heat to medium and boil sauce for 3 minutes.
4. Remove sauce from heat.
5. Slice flank steak against grain into 1/4 thick bite size slices.
6. Dip steak pieces into cornstarch to apply a very thin dusting to both sides of each piece of beef.
7. Let beef sit for 10 minutes so the cornstarch sticks.
8. Heat oil in a wok over medium heat until it is nice and hot but not smoking.
9. Add beef to the oil and sauté for two minutes stirring around a little to cook evenly.
10. Use a large slotted spoon and remove meat onto paper towels.
11. Pour oil out of wok then put pan back over heat and dump meat in and simmer 1 minute.
12. Add sauce and cook one minute while stirring then add all the green onions and cook 1 minute.
13. Remove beef and onions with tongs or a slotted spoon to a serving plate and serve immediately.
