Okay, I'm overrun with avocados, but this recipe was given to me by a long time friend. It is amazing and it makes a great appetizer before a light entree. I would serve it before a fish entree and an orange/sliced red onion salad with a saffron couscous. Ingredients:
3 nice ripe avocados |
6 tbsp of butter |
6 tbsp of red wine vinegar |
6 tbsp of brown sugar |
6 tbsp of worchestershire sauce |
6 slices of smokey bacon |
Directions:
1. Heat the butter and vinegar together over low heat, add sugar and wochestershire sauce. 2. Reduce to nearly syrup consistency. 3. Cook bacon until crispy. 4. Cut the avocados in half, do not peel, but remove the pit. 5. Drizzle the syrup over the avocados. 6. Top with crumbled bacon. 7. Serve, scoop and eat. |
