Avocado With Spicy Prawn Filling |

This is a perfect starter for any occasion. Its so flavourful and creamy but light. Ingredients:
10 king prawns |
50 g chives finely chopped |
6 cherry tomatoes |
1 avocado |
2 tablespoons of tomato puree |
2 tablespoons of vinegar |
1 tablespoon of plain yogurt |
1 tablespoon of olive oil |
1 tablespoon of lemon juice |
1 tsp of chilli |
1 tsp of ginger |
1/2 cucumber |
Directions:
1. Boil prawns until pink. 2. In a bowl combine all ingredients except for the avocado,cherry tomatoes and cucumber. 3. When cool mix prawns into the bowl and let marinate in the sauce for an hour in the fridge. 4. Peal and slice avocado in half vertically. Remove stone. 5. Chop cucumber into thin slices. 6. Spoon the prawn mixture into the avocado halves 7. Top with cucumbers and tomatoes. |
