Avocado Tomato And Mushroom Salad |

This is a very nice and refreshing salad that is good all year long, but especially good when tomatoes are fresh off the vine. Enjoy Ingredients:
2 fresh tomatoes |
2 avocados cut in half and peeled |
1/3 cup virgin olive oil |
12 medium shiitake mushroom caps |
1 tablespoon finely minced garlic |
1 tablespoon finely minced shallots |
1/4 cup red wine vinegar |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Slice tomato and peeled avocado from stem to tip and fan on plates. 2. Just before serving heat olive oil in a medium skillet over medium heat. 3. Add mushrooms and cook covered for 5 minutes. 4. Add garlic, shallots, vinegar and salt then cook covered 1 minute longer. 5. Remove mushrooms and arrange over avocado and tomato. 6. Give a few turns of the peppermill over each salad as desired. 7. Distribute dressing equally on the individual salads. |
