This recipe is from the Avocado Cookbook . Ingredients:
2 sheets shortcrust pastry, thawed |
1 large avocado, peeled stoned and chopped |
1/2 cup sour cream |
1/4 cup mayonnaise |
1 tablespoon lemon juice |
1/2 garlic clove, crushed |
1 pinch cayenne pepper |
fresh chives |
Directions:
1. Cut pastry into rounds using a 6-7cm cutter. Place pastry rounds in patty tins. Prick base of pastry. Bake at 190C for 10 minutes or until golden brown. Cool. 2. place avocado, sour cream, mayonnaise, lemon juice, garlic and cayenne into a food processor or blender. Process until smooth. 3. Spoon or pipe avovado mixture into cooled pastry cases. Garnish with snipped chives. |
