Serve this salad with grilled chicken or pork or as a chunky Southwestern dip.
Ingredients:
1 ripe avocado, seeded and diced
1/2 cup diced english cucumber
1/2 cup quartered grape or cherry tomatoes
2 tablespoons chopped onion
2 tablespoons fresh lime juice
2 teaspoons olive oil
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt
Directions:
1. Combine all ingredients in a medium bowl, tossing gently. Serve at room temperature or chilled.
