incredibly easy ..this soup is good warm or chilled.... ..i like mine warmed.................. courtesy of tortuga rum and caribbean party cookbook Ingredients:
1 - tablespoon butter |
3 - cloves garlic, minced |
4 - large scallions , chopped |
2 - large - ripe avocados, peeled and chopped and pureed in food processor |
3 - cups chicken or ( vegetable broth)... |
3 - tablespoons light rum |
1/2 - teaspoon white pepper |
1- teaspoon beau- monde- seasoning ( spice island) |
1 -cup half and half |
salt to taste |
6 - tablespoons diced ripe avocado |
Directions:
1. in a large saucepan or dutch oven , melt the butter over medium heat and saute the garlic and scallions until soft about 5 minutes. 2. do not allow the vegetables to brown...................... 3. add the chicken broth and stir well, then stir in the pureed avocado, rum and seasonings. 4. bring to a boil , stirring frequently, then reduce heat to low and stir in half and half. 5. cook another 2 minutes, until soup is heated through.but do not boil again. 6. add more salt if needed. 7. garnish each serving with a tablespoon of diced avocado on top and serve.................. |
