Avocado, Ricotta & Basil Dip |

A refreshing easy tasty dip. Great with fresh veggies, nachos, pita, or as a filling in a wrap. You could also spread this on a cracker and top with a veggie or olive as an appetizer. Recipe from an old Woman's Day Magazine. Ingredients:
2 avocados, pitted and peeled |
2 tbsp fresh basil, coarsely chopped |
1 tsp lemon zest |
3 tbsp lemon juice |
1 cup ricotta cheese |
2 ounces cheddar cheese, grated |
salt and pepper |
Directions:
1. With a food processor, blender, or hand blender puree the avocado along with the basil and the lemon zest and juice. 2. Add Ricotta and season generously. 3. Transfer to a bowl and add grated Cheddar. 4. Serve with veggies, nachos, pita or as a burrito filling or with whatever you wish. |
