Ingredients:
2 avocado chopped |
1 cup(s) red quinoa |
1 med tomato chopped |
1/4 cup(s) red onions diced |
2 basil leaves crushed |
1/3 cup(s) extra virgin olive oil |
1/4 teaspoon(s) cayenne |
1 clove(s) garlic minced |
2 limes juiced |
sea salt & pepper to taste |
Directions:
1. In a small saucepan, bring two cups of water to a boil add rinsed quinoa. Cover and simmer for 15-20 min. Cool and set aside. Mix dressing ingredients together in a small bowl. Mix all other ingredients in a large mixing bowl & then add cooled quinoa. Toss with dressing, chill serve. |
