Avocado Prosciutto Ham Sandwich |

This is a light and quick lunch choice. Ingredients:
1/2 ripe avocado, pitted |
2 slices pumpernickel bread, toasted |
1/4 cup canned garbanzo beans, rinsed and drained |
1 pinch salt |
1 slice prosciutto |
1 1/2 slices tomato |
1 slice havarti cheese |
1/4 cup alfalfa sprouts |
Directions:
1. Spread avocado on one slice of toasted pumpernickel bread. Place garbanzo beans on top of avocado and sprinkle with salt. Top with prosciutto, tomato, Havarti cheese, and alfalfa sprouts. Top with another slice of bread to make a sandwich. |
