If you have a lot of avocados or like me love them ,this is the pie for you. This pie is delicious with a cheese-cake like texture. Ingredients:
crust |
5 tbs unsalted butter |
1-1/2 c graham cracker crumbs |
1 tbs sugar |
filling |
2 med. hass avocados |
1 8 0z pkg cream cheese,room temperature |
1 14 oz. can sweetened condensed milk |
2-1/2 tbs fresh lime juice |
1-1/2 tbs fresh lemon juice |
pinch of salt |
whipped cream or confectioners sugar,for garnish |
Directions:
1. Make the crust: Preheat oven to 350 degrees. Brush an 8' springform pan with some of the melted butter. Mix remaining butter with graham cracker crumbs,sugar and salt in bowl. Press mixture into bottom and up sides of the pan. Bake till golden brown,about 15 mins. Cool completely on rack. 2. Filling: Have and pit avocados,scoop out flesh and chop. Transfer to a bowl,add cream cheese and beart with mixer on med. speed till smooth. Add condensed milk,lime and lemon juices,add the salt and beat until fluffy,scraping the bowl as needed. Pour filling into crust,press pece of plastic directly on surface and chill at least 4 hours. 3. Remove springform pan and slice pie. Garnish with whipped cream or confectioners sugar and serve immediately(top will brown as pie sits) |
