This is a lighter version of pesto. It's a great summer recipe, and a great way to use avocados. Ingredients:
1 cup fresh basil leaf |
1 large avocado |
1 tablespoon lemon juice |
1 cup pine nuts |
Directions:
1. Remove skin and pip from avocado. 2. Blend all ingredients until smooth. 3. Spoon mixture into a serving bowl. 4. Serve at room temperature. |
