Ingredients:
1 lb bag dry pasta |
1/2 cup crumbled feta cheese |
1/2 pint cherry tomatoes cut in eighths |
1 bunch green onions, ends removed, thinly sliced |
1 to 2 ripe avocados, peeled and chopped |
dressing |
2 to 3 tbsp country french vinaigrette (penzy's) |
2 to 3 tbsp water |
3 to 4 tbsp balsamic or red wine vinegar |
1 cup light mayonnaise |
1/4 cup olive oil |
1 tbsp honey |
Directions:
1. Boil the pasta according to the package directions. While it is cooking, clean and chop the vegetables and crumble the cheese. In a large serving bowl, mix the Country French Dressing Base with water, let stand a few minutes, then whisk in the rest of the dressing ingredients. Drain and rinse the pasta, toss with dressing, add onions, tomatoes, avocado and cheese, then toss again and serve. |
