This looks yummy! From Everyday Food issue 9. Ingredients:
3 navel oranges, segmented |
3 tablespoons orange juice |
2 tablespoons white wine vinegar |
2 tablespoons olive oil |
1 head red leaf lettuce, torn (large) |
1 avocado, peeled, pitted & thinly sliced |
salt and pepper |
Directions:
1. Combine orange juice, white wine vinegar, olive oil, salt and pepper. Set aside. 2. In a seperate bowl, lightly toss segmented oranges, red leaf lettuce, and avocado. 3. Pour vinegar dressing over all. 4. Enjoy. |
