This is a recipe I got out of the newspaper 35 years ago in 29 Palms, California...this is very tasty. Ingredients:
6 eggs |
6 tablespoons milk |
1/2 teaspoon salt |
1 dash pepper |
6 tablespoons butter |
1 small onion, diced |
2 large tomatoes, diced |
1/4 teaspoon salt |
vegetarian bacon bits (optional & as much as you like) |
1/8 teaspoon pepper |
1/4 teaspoon chili powder |
2 avocados |
Directions:
1. Omelet:. 2. Prepare as a regular omelet. Add avocado slices inside. 3. Sauce:. 4. In a medium skillet cook onions, tomatoes, salt, papper, chili pepper in butter. Simmer several minutes under onion is tender. Remove from heat. Peel avocades and reserve some slices for garnish. Mash remaining avocado and add to sauce. Mix well. Put in gravy boat so guests can ”pour“ it on. |
