Avocado & Mushroom Fettuccine |

Recipe sourced from .au. I haven't made it yet, but it sounds delicious. Ingredients:
1 avocado, large and sliced |
1 lemon, juice only |
250 g fettuccine |
1 tablespoon pesto sauce |
1 tablespoon olive oil |
1 onion, sliced |
2 garlic cloves, sliced |
200 g mushrooms, sliced |
2 teaspoons soy sauce, salt reduced |
pepper |
basil leaves (to garnish) |
lemon wedge, to serve |
Directions:
1. Place avocado on a plate and drizzle with lemon juice. 2. Bring large pan of water to the boil and cook fettuccine according to directions on the packet. 3. Meanwhile, heat the oil and stir-fry the onion for 1 minute over a medium heat. Add the mushrooms and garlic and continue cooking, stirring for 2 minutes. 4. Reduce the heat to medium and place a lid on the pan. Cook for 5 minutes, stirring once or twice. 5. Remove from heat and stir in the soy sauce and pepper. 6. Toss the freshly cooked fettuccine with the pesto sauce, mushrooms and the avocado slices. 7. Serve immediately with basil and lemon wedges. |
