This colorful recipe is best when made no more than four hours ahead. Ingredients:
1 cup diced jarred mango |
3/4 cup diced red bell pepper |
1/2 cup diced jicama |
1/2 cup thinly sliced red onion |
1/4 cup chopped fresh cilantro |
2 tablespoons fresh lime juice |
1/2 teaspoon ground cumin |
1/2 teaspoon chili powder |
salt and pepper to taste |
2 avocados, diced |
Directions:
1. Combine first 8 ingredients in a large bowl. Stir in salt and pepper to taste. Gently fold avocados into mango mixture. Cover and chill 30 minutes before serving. |
