This is adapted from a Cooking Light recipe and works beautifully with Chef-V's Cilantro-Lime Chicken, Cilantro-Lime Chicken. Serve this salsa atop the grilled chicken for a colorful and delicious main course. Ingredients:
2 cups chopped plum tomatoes |
4 tablespoons finely chopped onions |
4 teaspoons fresh lime juice |
1/2 teaspoon salt |
1/4 teaspoon fresh ground black pepper |
2 avocados, peeled and finely chopped |
1 dash extra virgin olive oil |
Directions:
1. Comine tomato, onion, lime juice, salt, and pepper in a bowl. 2. Add avocado; stir gently to combine. Add a dash of olive oil and toss lightly to mix. 3. Serve salsa over chicken. |
