From . Love avocados and juicy crunchy jicama as a contrast. Ingredients:
3 tablespoons olive oil |
2 tablespoons fresh lime juice |
1/4 teaspoon grated orange peel |
1 tablespoon fresh orange juice |
1 tablespoon chopped fresh cilantro |
1 teaspoon salt |
1/2 teaspoon ground black pepper |
1/4 teaspoon grated fresh ginger |
1 (1 -1 1/4 lb) jicama, peeled and cut into thin strips |
1 yellow bell pepper, seeded and cut into thin strips |
2 ripe avocados, cut in 1/2 inch pieces |
1 bunch fresh watercress |
Directions:
1. Make dressing: Combine all dressing ingredients in small bowl. 2. Combine jicama and bell pepper in bowl; toss with 3 tbs dressing. 3. Just before serving, toss avocado with remaining dressing. 4. Arrange watercress around edge of serving platter, spoon on jicama mixture and top with avocado. 5. NOTE: If you like more of a bite to your salads, finely sliced red onion rings can be added with jicama and pepper or served on side as a topping. |
