Interesting Avocado salad and hummus pita Ingredients:
4 pita bread rounds, halved |
romaine lettuce leaf |
tomato, slices |
alfalfa sprout (optional) |
hummus |
2 large ripe avocados, coarsely chopped |
4 large radishes, chopped |
2 celery ribs, chopped |
2 green onions, chopped |
2 tablespoons fresh lemon juice |
2 tablespoons olive oil |
1/2 teaspoon salt |
1/4-1/2 teaspoon fresh ground pepper |
Directions:
1. Spread 1/4 cup of Hummus inside each pita half. 2. Spoon Avocado Salad evenly into each half. 3. Add lettuce, tomato, and, sprouts. 4. Serve immediately. |
