This dish combines the sweetness of of ruby red grapefruits, the smooth texture of avocado, and the tanginess of a simple vinaigrette. My husband isn't a big salad eater, but he loves this one! Ingredients:
2 ruby red grapefruit, segments sliced withpith removed |
8 cups of mixed greens, baby spinach, or watercress (with big stems discarded) |
1 avocado, pitted, peeled, and sliced lengthwise and crosswise |
1 tsp balsalmic vinegar |
1 tsp sugar |
1 tbsp olive oil |
salt and pepper to taste |
Directions:
1. Whisk together vinegar, sugar, oilve oil, salt, and pepper in a small bowl. 2. Toss with greens. 3. Top with avocado and grapefruit. |
