This is a great recipe, delicious, simple and full of healthy fats. It is vegan by itself, but would be delicious with chicken or shrimp!
Ingredients:
1 lb fettuccine
1 lemon, juice of
2 garlic cloves
1/2 teaspoon salt
3 tablespoons olive oil
2 avocados
1/2 cup fresh basil
salt & pepper
Directions:
1. Cook fettuccine according to directions on package. Drain.
2. In a blender or food processor combine lemon juice, garlic, salt and olive oil. Blend.
3. Add avocados and basil and blend until smooth.
4. Toss with hot pasta. Add salt and pepper to taste.
