What do you do with leftover hard-boiled eggs? Give this a whirl. Ingredients:
6 large hard-boiled eggs, peeled |
1 medium avocado, halved & pitted |
1+ tbsp lemon juice, to taste |
paul prudhomme's poultry seasoning, or similar blend - to taste |
cayenne pepper, to taste |
Directions:
1. Cut eggs in half and carefully remove yolks. 2. Combine yolks, avocado flesh, lemon juice & seasonings. Mash and mix to incorporate. 3. Taste & adjust seasonings if needed. 4. Cut a small corner from a plastic zipper bag. 5. Spoon mixture into bag. Pipe into egg halves. 6. Sprinkle eggs with a bit of cayenne pepper if desired. |
