AVOCADO CUCUMBER SANDWICHES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sanderson Estate in Bonham, Texas in 1984. Notation on card indicates this came from a 1961 Cookbook entitled Recipes from the Old South. Read more . After seeing all of these recipes from this estate I went out and purchased this cookbook and it is loaded with really good classics. This is tried and true and very good. Ingredients:
8 slices bread |
4 tablespoons mayonnaise |
2 avocados thinly sliced |
2 cucumbers sliced thinly |
1 teaspoon freshly ground black pepper |
1 teaspoon salt |
Directions:
1. Spread mayonnaise on each slice of bread. 2. Place cucumbers in a thin layer on four of the bread slices followed by a layer of avocado. 3. Sprinkle with salt and pepper then top with remaining bread slices. 4. Cut into triangles and served as an appetizer or eat whole as a light lunch. |
